When Ricardo Espinoza immigrated to the U.S. from Michoacán, Mexico, as a high school student, he brought with him a dedicated work ethic, an entrepreneurial spirit, and a dream. For 20 years, he worked in industrial manufacturing plants in Southern Minnesota. But when the company was acquired and shut down, Espinoza faced a turning point. Instead of searching for another job, he took a bold leap—investing his retirement savings and selling his investment properties to bring his childhood visions to life.
In June 2018, Espinoza opened La Michoacana Purépecha on East Lake Street in Minneapolis, offering authentic Mexican treats inspired by his heritage, all supported by NDC’s lending team. The business quickly became more than just an ice cream shop—it became a vibrant community gathering space, celebrating culture and supporting local families.
Fueled by his passion and determination, Espinoza has expanded with five new locations in 2024, bringing his total to 10 locations across the Twin Cities metro, including Shakopee, Brooklyn Park, and Lakeville, as well as in St. Cloud and Willmar. His locations also include Rochester, MN, Mall of America, Eagan, St. Paul (right by the Mexican Consulate), and his main store in Minneapolis, which has been operating since 2018. A new Apple Valley location is set to open in May 2025. Espinoza hopes to take this wave forward and continue the expansion.
Most recently, NDC has continued to support Ricardo in various business initiatives as he explores new opportunities for growth. Through partnerships with the Hmong American Farmers Association and a local creamery, he remains committed to high-quality, locally made products. Through La Michoacana, Ricardo is strengthening his business while contributing to the local economy and community.
