Manny's Ensalada de nopales (cactus salad)

Ingredients

8 nopales (cactus)

1 white onion

1 tsp Mexican oregano

2 tomatoes

1 avocado

4 Tbsp cilantro

4 Tbsp olive oil

2 serrano peppers

1 tsp jalapeno juice

Cotija cheese (for sprinkling)
 

Prep

1. Rinse nopales with cold water, dry with paper towel

2. Cut nopales julienne style

3. Saute nopales in frying pan with salt

4. Cut onion julienne style, dice tomatoes, dice cilantro, dice peppers

5. Combine nopales with other ingredients in large mixing bowl

6. Place mix in fridge for one hour

7. Sprinkle with cheese and sliced avocado
